Hey, friends! It’s been a while since one of these monthly recaps. I’m seriously overdue, because sooo much has happened in the last three months. Case in point: I’m writing this from my family home in Michigan. Yup, the longterm travels in Latin America are officially OVER! I’ll try to keep this recap brief but there’s just so much to cover. Hi friend! Yayyyy for Friday!  We are slowly but surely wrapping up the school year.  The sports banquet was last night and it was such a treat to get to acknowledge all of the hard work that the athletes, coaches and volunteers put towards our season this year. Our school was the track champions for the second year in a row and we couldn’t be prouder. Also, this was the first year (in forever) that we had a football team!  It was a 6-man team and the kids grew so much during that season.  My son was the quarterback, I was a team mom and James’ dad was one of the coaches.  There were a lot of ups and downs...

Gluten Free “Choco Tacos”

These gluten free “Choco Tacos” combine pizzelles, ice cream and chocolate for a delicious sweet treat. Perfect for a Cinco De Mayo celebration or any day of the week.  What are “Choco Tacos”? Made by Klondike, Choco Tacos were a frozen treat that consisted of a “vanilla ice-cream core, topped with peanuts and crispy chocolate and wrapped in a sugar cone-like shell.” (The Guardian) However, Klondike discontinued it in 2022. Old Town Margaritas

These Old Town Margaritas are a nod to San Diego’s Old Town area. Old Town is a hotspot of the best Mexican food and margaritas in town.  These are the best margaritas! Back in the late 80’s, I was in college at San Diego State University. It wasn’t that expensive to go to college at that time, and my Mom and Dad paid my tuition.
