Empanadas de Camote (Sweet Potato Empanadas)

These beautiful freshly baked empanadas de camote are filled with sweet potato, slowly simmered in cinnamon and anise. The dough is hand-kneaded and rolled out, then baked with the fragrant sweet potato filling. I like to eat them right out of the oven with a steaming cup of Mexican hot chocolate. I used to think empanadas were a Mexican thing but soon discovered that almost every country has their own version. Whether they are sweet or savory, they are incredibly delicious, easy to eat, and the perfect food on the go. Empanadas by Doa Consuelo This recipe was given to me by Doa Consuelo, a friend of my cousin Esperanza. Doa Consuelo had heard that my little nephew has severe...

Chilaquiles Rojos

Where have these red chilaquiles been all my life? Chilaquiles (pronounced chee-luh-key-lays) are a traditional Mexican breakfast made with tortilla chips simmered in sauce. Typically, theyre made with green salsa (in Spanish, salsa verde, which yields chilaquiles verdes) or red enchilada sauce (chilaquiles rojos). I love how the chips soak up some of the sauce and become a little tender. Fresh toppings, including cilantro, radish or onion, crumbled cheese and oftentimes, fried eggs, make this chip-based dish more of a complete meal. When it comes to chilaquiles, the sauce is everything. Ive already perfected my chilaquiles verdes recipe with homemade salsa verde. I finally tried making chilaquiles with my favorite homemade enchilada sauce, and holy smokes, Ive been missing out!...

All opinions are mine alone. #TheresOnlyOneSkinner #CollectiveBiasWeeknights are tough, and they only seem to get more difficult as we get in closer to the holidays. These Tex-Mex Lasagna Roll-Ups are a fun twist on a modern Italian classic; lasagna roll-ups!Ive taken lasagna roll-ups and given them a Tex-Mex kick. I guess you could call it Tex-Italia! I loosely got the idea for this fun dish off of one that my mom makes which is called Cowboy Spaghetti. I took this dish a little more Tex-Mex though with the addition of beans and taco meat to all...
