Need a quick side dish?

Throw this quick sweetcorn and tomato salad side together in minutes when you need to get dinner on the table fast. It’s great for a crowd as well, don’t you find that so often the simple things are the best? I do!

As the weather gets (slightly) warmer, the meals get lighter, right? Which honestly, is a good thing because everyone spends more time outdoors and time available to get dinner ready becomes less and less.

Freezing cold weather makes me more inclined to cosy up in a warm kitchen, warmer weather has the opposite effect so fast is good and this salad is nothing if it’s not fast!

There are a whole heap of things you could add to this salad to bulk it out (see below for suggestions) and make it more substantial if you wanted to but as it is it’s so simple, so straightforward and so yummy, some things are best left alone!

What To Eat With Corn Salad

This is the salad I make when we have these chicken legs, this BBQ chicken or I’ve had some of these chicken breasts in the oven and it makes the best side for them.

This is proper Summer food, light, bright, fresh and colorful. Try is as well with shrimp or steak straight from the grill or some leftover pasta from the night before. It’s an all rounder, this one!

More Salad Recipes Kids Eat!

Ingredients

It will come as no surprise to you that the base of this salad has just, wait for it….2 ingredients! Yep, you guessed it, thats sweetcorn and tomatoes :)

If you’re a black pepper lover then add a little to this salad as it goes well, but my littler kids wouldn’t have that and so I leave it out!

Side note…my kids (and us, actually!) think of tomatoes as a vegetable even though we all know it’s technically a fruit, so this is classed as a vegetable dish. Why are tomatoes considered to be a vegetable by so many people. Anyone know?!!

Tinned Corn

Tinned sweetcorn usually contains (check the label though!) just corn, water and salt. If the tinned sweetcorn you have available to you has added ‘ingredients’, then this canned sweetcorn is on sale at Amazon and is sugar free.

Incredibly, it seems to vary from country to country as to whether manufacturers add sugar to tinned corn, so I always check (force of habit!) but there are stores out there nearly everywhere that stock tinned corn without adding sugar to it.

Being fairly reasonable to buy, sweetcorn is really kid friendly and for some reason it always seems to taste better than stripping the corn off a cob. I don’t know why. Unless the cooked cob is hot, covered in butter and eaten with bare hands!

I’ve used tinned corn because it makes this salad into something that takes as long as it takes you to slice a tomato with a sharp knife, but of course if you prefer to use fresh corn kernels sliced off the cob, feel free!

Juicy Tomatoes

Fresh tomatoes are available pretty much everywhere all year round but that’s not to say they’re always good.

I live somewhere where the weathers rarely warm and so the ones I can get are mostly imported, I still make sure they’re deep red, firm but soft (if you know what I mean!) and look fresh.

There are suppliers that grow in greenhouses here and if I can get those I do, but if you’re lucky enough to live somewhere they grow naturally outside try and get those. They taste so much better!

There are over 10,000 types of tomatoes. Who knew! The type of tomato doesn’t matter particularly, I’ve used teeny weeny cherry tomatoes cut in half and huge beef tomatoes that ooze tomatoey flavor, so go with whatever suits you best. Just make sure they’re ripe!

Additions

If you’re looking for variations, the list is almost endless. I’ve listed some of the best things we’ve added to this salad at times, but take your pick or pick none at all!

  • Red onions
  • Red bell peppers
  • Cucumber
  • Fresh herbs (parsley, cilantro, fresh basil etc…)
  • Avocados (kids favorite)
  • Feta cheese crumbled and mixed in

Dressing Your Sweetcorn and Tomato Salad

Salads need a dressing, right? Well not always but I add done to this especially if I’ve used tomatoes that don’t give as much juice when they’re cut.

You can use a simple olive oil and red wine vinegar vinaigrette, or try this maple balsamic dressing or a simple lemon salad dressing. Both are dead simple to make and add kid friendly flavor to this side salad.

Storing This Salad

Your undressed salad will keep in a bowl, covered in food wrap, in the fridge very happily for 3-4 days. The corn stays crisp and the tomatoes last well as long as they’re kept cold.

However, that said I think this tastes better at room temperature and so if I’ve made it ahead of time i’ll take it out of the fridge and leave it to warm up for a few hours before serving it. If i’m making it to eat then and there then it’s already good.

In a hurry and it’s fridge cold? Pop it into the microwave for a minute, the tomatoes will start to release their juiciness and the flavors will come up again. Freezing cold tomatoes taste of very little, room temperature ones are sweet. Take your pick!

How To Make Sweet Corn and Tomato Salad

This couldn’t get much easier and barely need any instructions, I barely think of this as prep! I use one tin of sweetcorn to one large beef tomato as I like the quantities to be even.

All you need to do is drain your sweetcorn (no need to rinse it) and add it to a large bowl. Slice your tomatoes into small pieces with a really sharp knife and add them to the corn.

Get your dressing ready if you’re using one, pour in onto the corn and tomatoes and then toss the dressing into the salad. Job done!
