This "souper" easy recipe is made in the blender.
For those of us in Florida and other warm climates, this room temperature soup will be refreshing. For those in cooler climates, it won't warm you up, but I'm sure you will still enjoy it (unless you don't like spinach).
You could also think of it as a green smoothie and drink it for breakfast or a quick energizing snack.

For anyone on WW- this is a powerful soup with zero points if you omit the avocado. If you include the avocado, it still minimal depending on your program color choice.

This recipe is 100% permissible to eat on Passover for breakfast, as a snack or a soup starter for lunch or dinner. It is a refreshing pick me up that is light and healthy.

I have to say his spinach soup recipe is really tasty!
Ingredients:
1 pint of grape tomatoes or 3 plum tomatoes
1 bag of baby spinach or 1 bunch of leafy spinach ( I used 8 ounces)
1 stalk of celery ( I'm guessing it is one rib of celery, not a bunch)
1 small clove of garlic ( peeled of course)
1 orange, squeezed
1-2 basil leaves or a few sprigs of cilantro ( I substituted fresh oregano)
1/2 avocado ( I omitted the avocado because I didn't have any ripe avocado)
1 bag of baby spinach or 1 bunch of leafy spinach ( I used 8 ounces)

Preparation:
1. Blend the tomatoes, celery, garlic and orange juice.
2. Add the spinach a handful at a time until well blended.
3. Lastly add the 1/2 avocado and herbs and blend until creamy and smooth.
4. Pour into a bowl and enjoy. This soup is best eaten soon after preparation.
Of course all fruits and vegetables are naturally vegan and gluten free!

I made mine without the avocado because I didn't have a ripe one. In addition,
I didn't have basil, so I clipped some of the oregano that I'm growing in a pot and added the oregano,
