Spicy Potato Soft Taco


This Spicy Potato Soft Taco is a big hit with the family. 

My vegan version of this Taco Bell favorite includes homemade taco shells, perfectly roasted potatoes, vegan chipotle sauce, a vegan version of Mexican Queso Blanco, and lots of fresh veggies. 

I was feeling ambitious this morning, so I decided to make homemade taco shells, but you can save a bunch of time by using your favorite low point tortilla shell option. 

Making homemade taco shells ensures that your tacos are fresh and free of preservatives, while the filling and toppings can be customized to your liking.

This vegan version of Taco Bell’s Spicy Potato Soft Taco has 14 WW points. I know that sounds like a lot, but if you read below you’ll find some tips for lowering the points. (Spoiler alert: potatoes and flour tortillas have a lot of points, so if you substitute you can reduce the points quite a bit)

Spicy Potato Soft Tacos ingredients

Taco Shells:

  • 2 ¾ cups all-purpose flour
  •  5/6 cup warm water
  • 1 tsp sea salt
  • 1 tbsp olive oil

Spicy Potatoes:

  • 6 small potatoes (or 4 medium), peeled and diced
  • Spice mix: 1 tsp dried basil, 1/2 tsp turmeric powder, 1 tsp hot paprika, 1/2 teaspoon dried marjoram
  • Sea salt, to taste
  • 1 tsp olive oil

Tacos:

  •   6 large lettuce leaves
  • 6 tsp vegan chipotle mayonnaise
  • 4 ounces vegan Mexican Queso Blanco, crumbled
  • 1 small chili pepper, sliced or chopped
  • 1 medium red onion, sliced
  • 1 tbsp fresh parsley, roughly chopped
  • Fresh rosemary leaves (optional)

How to make Spicy Potato Soft Taco (step by step):

  1. Add the flour to a mixing bowl. Then, mix warm water with 1 teaspoon of sea salt and pour it into the mixing bowl.
  2. Add 1 tablespoon of olive oil and mix again. Turn it onto a floured surface, and knead for about 5 minutes. Cover the dough with a kitchen towel and let it rest for 10 minutes.
  3. Divide dough into 6 portions. On a lightly floured surface, roll each portion into a circle.
  4. Preheat a cast iron and cook taco shells over medium flame for about 1 minute on each side, until lightly browned. Keep taco shells warm.
  5. Meanwhile, toss potatoes with spices and 1 teaspoon of olive oil. Arrange the potatoes in the air fryer cooking basket. Cook your potatoes at 370 degrees F for about 20 minutes.
  6. Once the potatoes are cooked, it’s time to assemble your tacos. Add one lettuce leaf to each taco shell. Add a generous amount of the potatoes to each taco shell and then drizzle with chipotle mayonnaise.
  7. Top with crumbled cheese, onion, peppers, and parsley. Fold up your taco and enjoy!

  For a protein boost, add a can of black beans or chickpeas to the potato filling. You can mash them for a creamy texture. You can also add tofu or tempeh to the filling.

  • Substitute sweet potato for a healthier option. 
  • Instead of a soft taco shell, use a crispy corn tortilla or a lettuce wrap for a lighter option.
  •  Load up on vegetables – Top your tacos with tomatoes, marinated mushrooms, sliced avocado, or any other veggies you like.

Tips and Tricks for Making Spicy Potato Soft Taco

  • Choose a potato variety that holds up well when cooked, such as Yukon gold, red potatoes, or fingerling potatoes. Avoid starchy potatoes like russet potatoes, as they tend to fall apart when cooked in an air fryer.
  •  If you do not have an air fryer, boil potatoes until fork tender. Then, roast them in the preheated oven at 425 degrees F for about 35 minutes. You can also fry them in a pan with some oil until they are crispy and golden brown. However, frying increases the fat content as well as calories and WW points.
  • To make diet-friendly tacos, avoid using high-calorie toppings or use them sparingly. Instead, try adding salads to boost flavor and nutrition without adding too many calories.
  • For the perfect homemade taco shells, the water you use to make your dough should be warm, but not too hot. Aim for a temperature between 100 and 110°F. Kneading the dough well will help develop the gluten and create a smooth texture. Aim to knead the dough for at least 5 minutes. Cook taco shells for only a minute or two on each side. Overcooking them can make them tough and dry.
