Trust us when we say that this is the first dip to go whenever we bring it to a party! It’s not only a great way to use up produce, but it’s super simple to make and there’s hardly any cleanup! And everyone from kids to adults go back for seconds.

By roasting half of the corn in the cast iron skillet, it helps to caramelize the corn and brings out a roasted flavor that is mesmerizing. You also can’t go wrong with any dip that contains sour cream, mayo, cream cheese and shredded monterey jack cheese, right?!?

Can I still make hot corn dip if I don’t have a cast iron skillet?

Of course you can. Using a skillet that you have, brown the corn and saute the peppers and onions. Once they have been sauteed, mix into a large bowl with the remaining ingredients.

Pre-grease a 9×13 or similar size baking dish. Pour the corn dip into the dish, top with the remaining half of the cheese and bake according to the printable recipe found below.

How to Make Hot Corn Dip

Start off by grabbing a pack of Dandy® Sweet Corn! You can grab the corn from the local grocery store and can easily be found in the produce department.

Dandy® Sweet Corn is the best corn around – and not just because of its delicious taste! The experts at Duda Farm Fresh Foods use traditional breeding practices to grow high-quality produce that is completely GMO-free. Because their growers harvest corn in the best possible conditions, you can buy Dandy® Sweet Corn and be confident that the freshest ears will end up in your home.

Next, you want to preheat the oven to 325° F.

Cut the corn off the cob. You can do this with a corn cutter as shown in the video below, or a sharp knife.

Then, melt 1 tbsp butter then add 2 tsp oil in a skillet over high heat. Add half of the corn and half of the garlic. Cook for 3 minutes or until the corn is golden (stir occasionally).

Transfer the corn to a bowl, repeat with remaining corn.

If the skillet looks dry, add a touch of oil. Next, add both bell peppers and onion, cook for 2 minutes until softened.

Once the peppers and onions have sauteed, add half the cheese to the skillet, then all the remaining ingredients and mix.

Finally, top with remaining cheese. Bake for 30 minutes or until golden and bubbly on top.

Top with garnishes if desired. Serve hot with corn chips!
