Eating vegetables is also delicious, especially if you have a recipe for sopes like this. To prepare we will use nopales as a base, instead of dough, so it will be a very light dish, perfect for breakfast. Nopales are a traditional food of Mexican cuisine and a healthy alternative because it has a high fiber content. In addition, they are versatile and can be combined with different foods.

  • enough of cooking spray oil
  • 1 pumpkin sliced
  • 2 cuaresmeño or jalapeño pepper sliced
  • 1 cup of mushroom filleted
  • enough of oregano
  • 1 teaspoon of garlic powder
  • to taste of salt
  • to taste of black pepper
  • 4 nopales
  • 1 1/2 cups of refried beans
  • 1 red pepper julienne cut
  • 1/4 of onion cut in julienne
  • enough of cherry tomato to decorate
  • enough of oregano


Heat a grill and sprinkle oil on it, then place the mushrooms, pumpkins and peppers; Season with oregano, garlic powder, salt and pepper; Cook for 5 minutes. Remove and reserve.
Grill the nopales for 5 minutes; Remove and reserve.
To assemble the sopes, place the nopales as a base, spread refried beans and grilled vegetables. Garnish with cherry tomatoes, onion, pepper and some oregano.
