Ingredients and substitutions
- Extra-lean ground beef – use ground turkey or chicken for a leaner option. You could also use a meat substitute for a vegetarian option
- Yellow onion – white onion or shallots can be used instead.
- Garlic – freshly minced garlic is best but jarred minced garlic will work in a pinch.
- Taco seasoning – use a store-bought version or make your own using a blend of chili powder, cumin, paprika, garlic powder, onion powder, red pepper flakes and oregano.
- Lime juice – freshly squeezed lime juice is best. Bottled lime or even lemon juice can be used if it’s all you have on hand.
- Frozen corn – fresh or frozen corn would also work.
- Black beans – kidney beans would also be good.
- Green chilies – fresh or canned jalapenos would also work.
- Diced tomatoes – use a can of crushed tomatoes instead.
- Beef broth – swap out for chicken or vegetable broth.

How to make taco soup in the crockpot
Step 1: Brown the ground beef.
Brown ground beef in a large skillet over medium-high heat, about 5 minutes.
Step 2: Add everything to the crockpot.
Add beef and remaining ingredients (except for toppings) to crockpot.
Step 3: Cook the soup.
Cook on high for 4 hours, or on low for 8 hours.
Step 4: Serve with your favourite toppings!
