How to Make Chicken Tortilla Soup for Crock Pot
It’s almost too easy to make this chicken tortilla soup for crock pot slow cooking between 3-8 hours depending on what type of crock pot you have. In general, you’re going to open a bunch of bpa-free, organic cans and dump them together. Add some chicken and chicken or bone broth and done.
Here’s the ingredient list for my homemade chicken tortilla soup:
- 3 cans of Rotel tomatoes and green chilies
- 1 can organic black beans, drained
- 1 organic pinto beans, drained
- frozen organic corn
- organic red enchilada sauce
- organic chicken broth or homemade bone broth
- 4 boneless, skinless chicken thighs
Then, gather your toppings — this is what we use:
- homemade lime crema
- homemade tortilla chips
- fresh avocado with sea salt and lime juice
- fresh cilantro chopped into small pieces

- To a slow cooker or the VitaClay clay pot, add the rotel, drained blacks beans, drained pinto beans, corn, enchilada sauce and chicken broth. Stir to combine.
- Place the chicken on top of the mixture and gently push until fully submerged.
- Cover and set your crock pot on low for 8 hours or high for 4 hours. For the VitaClay, set the cooker to “slow cooker/stew” and set for 3 hours.
- Once done, use a fork to remove the chicken from slow cooker and shred in a bowl. Return to the slow cooker and combine. Serve warm.
