Ingredients
- 1lb Jennie-O Chorizo Seasonings Turkey Sausage
- 1 can mild Rotel
- 1 cup reduced fat Fiesta or Mexican shredded cheese
- 5-6 corn tortillas
- 1 medium size onion
- 2 red bell peppers
- 1tsp cumin
- 1tsp minced garlic
- 1 fresh lime (or 2Tbsp of lime juice)
Directions
- Preheat oven to 375.
- Cook/fry up the Chorizo Seasonings Turkey Sausage over medium heat. Set aside.
- Dice the onion and red bell peppers. Set aside.
- Saut the diced onion and peppers over medium heat for 5-10 minutes.
- Add Rotel, cooked sausage, minced garlic, cumin, and lime juice to pan with onions and peppers. Mix/stir everything together.
- Spray 913 baking dish with non-stick cooking spray and place three corn tortillas in bottom of pan (I cut mine in half to get them to fit nicely).
- Spread sausage mixture over top of tortillas and top with 3/4 cup of shredded cheese.
- Place two (or three) tortillas on top of mixture and top with remaining cheese (I saved some Rotel to add to the top of the tortillas).
- Bake for 10-15 minutes.
- Enjoy!
Note this is a little spicy! Id give it two out of three peppers on a spicy scale.
