Thai Chicken Pizza Ingredients
For the Spicy Peanut Sauce, you’ll need:
- Smooth peanut butter
- Hoisin sauce
- Honey
- Red wine vinegar
- Ginger, minced
- Roasted sesame oil
- Soy sauce
- Vietnamese chili sauce
- Oyster sauce
- Water
Organic smooth peanut butter without added sugars works well in this recipe.
If you don’t have any Vietnamese chili sauce, you can substitute red pepper flakes and a little neutral oil.
For the Thai chicken pieces, you’ll need:
- Boneless and skinless chicken breast
- Olive oil
- Spicy Peanut Sauce
For assembling the Thai Chicken Pizza, you’ll need:
- Pizza dough
- Scallions or red onion
- White bean sprouts
- Matchstick carrots
- Roasted peanuts
- Chopped fresh cilantro
- Cucumbers (optional)

How to Make CPK Thai Chicken Pizza
To cook the Thai Chicken pieces:
- Dice the boneless chicken breast into three-quarter-inch pieces.
- Heat a saute pan over medium-high heat.
- Pour the olive oil into the pan, and when hot, add the chicken pieces.
- Saute the chicken for five to six minutes.
- Transfer the cooked chicken to a plate and allow it to come to room temperature before covering it with plastic wrap and chilling it in the fridge. While the chicken is in the refrigerator, it is a good time to make the Spicy Peanut Sauce below.
- Once the chicken is cold, toss it with half of the Spicy Peanut Sauce. Cover the bowl and return the coated chicken to the fridge until needed.
To prepare the Spicy Peanut Sauce:
- Add all the ingredients for the sauce in a small saucepan.
- Heat over medium-low heat.
- Use the end of a wooden cooking spoon to stir the sauce. At first, it will be very thick, but it will start to thin out.
- Allow the sauce to simmer for about a minute while continuing to stir.
- Remove the saucepan from the heat and pour into a heat-resistant bowl to cool.
- Cover and place in the fridge until needed.
To assemble the pizza (this recipe makes one extra large or two medium pizzas):
- Preheat the oven to 425°F. If you are using a pizza stone, make sure it is in the oven while preheating.
- Remove the dough from the fridge. If you are making two medium pizzas, divide the dough in half. Roll each piece of dough into a ball and let the dough rest on the counter for about 30 minutes. While the dough is warming up, you have plenty of time to prep the toppings.
- Rinse and drain the vegetables:
- Slice the scallions thinly on the diagonal. Julianne or cut the carrots into small pieces. Roughly cut the cilantro and crush the peanuts. If you want to use cucumbers (and you really should), peel and cut them in half. Use a spoon to scrape out the seeds and then chop the cucumber into half-inch cubes.
- Press a ball of pizza dough into a disc.
- Roll the dough into a round, thin crust. If you are good at tossing pizza, you can use that method instead.
- Spread some cornmeal on the back of a clean baking tray or pizza peel. Transfer the pizza crust on top of the cornmeal.
- Spread a thin coating of Spicy Thai Peanut Sauce on the crust.
- Top the crust with mozzarella cheese and Thai Chicken pieces. At this point, some people like to add the vegetable toppings. If that’s you, spread the green onions, bean sprouts, and carrots over the pizza. Other people prefer to wait to add the veggies until after the pizza comes out of the oven to keep them crunchy. Ingredients
Spicy Peanut Sauce
- 1/2 cup peanut butter
- 1/2 cup hoisin sauce
- 1 tablespoon honey
- 2 teaspoons red wine vinegar
- 2 teaspoons minced ginger
- 2 tablespoons roasted sesame oil
- 2 teaspoons soy sauce
- 1 teaspoon Vietnamese chili sauce (or dried chili flakes)
- 1 tablespoon oyster sauce
- 2 tablespoons water
Chicken
- 10 ounces boneless/skinless chicken beast, cut into 3/4-inch cubes
- 1 tablespoon olive oil
Pizza
- 16 ounces pizza dough
- 2 tablespoons cornmeal for handling
- 2 cups shredded mozzarella cheese
- 1/4 cup scallions slivered diagnoally
- 1/2 cup white bean sprouts
- 1/4 cup carrots chopped
- 1/4 cup roasted peanuts
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped cucumbers – optional
Instructions
Sauce
- Combine sauce ingredients in a small pan over med. heat. Bring the sauce to a boil; boil gently for one minute. Divide into 2 portions for use on chicken and pizza; set aside.
Chicken
- Cook the chicken in olive oil over med-high heat, stirring, until just cooked; 5 to 6 minutes do not overcook. Set aside in refrigerator until chilled through. Once chilled, coat the chicken with 1/4 cup sauce. Set aside in refrigerator.
Pizza
- Use a large spoon to spread 1/4 cup sauce evenly over pizza dough within the rim. Cover sauce with 3/4 cup cheese. Distribute half the chicken pieces over the cheese followed by half the green onions, bean sprouts, and carrots, respectively. Sprinkle an additional 1/4 cup cheese over the toppings and top the pizza with 1 tablespoon chopped peanuts. Transfer the pizza to oven and bake until crisp and golden and the cheese is bubbly, 9 to 10 minutes. When cooked through, remove pizza from oven. Sprinkle 1 tablespoon chopped cilantro over the hot cheesy surface. Repeat with remaining ingredients for a second pizza.
