SUPER FLAVORFUL QUESADILLA

I don’t know about y’all but if I can possibly try to make something in an air fryer – I will! Nothing is off limits. The main question I will ask myself is “Does it air fry?” and I will test to find out! These crispy, crunchy Air Fryer Buffalo Chicken Quesadillas are a delicious force to be reckoned with! Everything you love about quesadillas – the gooey cheesy goodness with the ease of the whole meal made in the air fryer, combined with the bursting flavor of buffalo chicken means you have the ultimate meal that will have your taste buds doing a happy dance!

FREQUENTLY ASKED QUESTIONS: 

What size Air Fryer should I use?

This recipe was tested with a 5 quart air fryer basket. This is the most common size air fryer that is sold in the U.S. If you have a larger air fryer or an oven style air fryer, you may be able to cook more quesadillas at once. If you have a smaller one, you’ll need to cook one at a time. Y’all, I cannot possibly test every style of air fryer out there (it seems like there are a million styles these days) and I am just not familiar with all of them so you gotta use your own personal knowledge of your air fryer with how best to make these.

Can I use other meat?

Certainly! If you want to, you can swap the chicken for shrimp and have buffalo shrimp quesadillas. You can use other meat, but just think of how it would taste with the buffalo wing sauce before making the swap.

What else can I add in these quesadillas?

Here are a few other ideas you can add into these Air Fryer quesadillas: red and yellow bell peppers, pepperoncini, jalapeños, sautéed onions, and mushrooms. You don’t want to overstuff these, so be careful with how many additions you use.

Can I make these ahead of time?

You can certainly assemble them ahead of time and then have them ready to go, waiting to be cooked once it’s time to start dinner, or get ready for appetizers or snacks. If serving at a party or get together, you can pop them in as guests are arriving and have them nice and hot when they’ve settled in.

Can I make these in the oven?

Certainly! This helps get more done at once. Try baking them at 350F on a baking sheet for 15 minutes, or until they’re golden brown. You may want to flip them over to crisp up the other side.

Can I make sheet pan quesadillas?

You bet! You can use a baking sheet and assemble these as one big quesadilla and cut after you bake. Check out my recipe for Sheet Pan Chicken Quesadillas to see how to assemble and cook it.

Can I freeze these?

Yes! In fact, you can freeze them 2 ways. First, you can freeze them assembled but uncooked. Or, you can freeze them cooked. Either way, wrap the quesadillas in parchment paper or plastic wrap before wrapping in aluminum foil and placing them in a freezer safe bag to be frozen for up to 3 months.

How to store leftovers?

Leftovers can be placed in an airtight container or a ziptop bag and should be kept in the fridge for up to 3-4 days. Reheat by popping back in the Air Fryer until warmed through.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • shredded rotisserie chicken – store-bought rotisserie chicken works great here but you can boil some chicken breasts or oven bake them, use leftovers or use the grilled chicken they sell in the refrigerated section of the grocery store.
  • buffalo wing sauce – I prefer Frank’s buffalo wing sauce
  • ranch dressing – I like to make my own homemade ranch dressing but you can use your favorite store bought.
  • flour tortillas – this is a standard soft taco size tortilla, I don’t recommend corn tortillas as I don’t think they cook up as well for quesadillas.
  • shredded cheddar cheese – or any shredded cheese you enjoy: pepper jack or a Mexican blend also tastes amazing.
  • crumbled blue cheese – this one is completely optional if you don’t enjoy blue cheese – you could also substitute with queso fresco.
  • chopped cilantro – optional, leave it out if you don’t enjoy or you can use dried (although that can be hard to find)
  • ranch or blue cheese dressing, for serving

HOW TO MAKE AIR FRYER BUFFALO CHICKEN QUESADILLAS

In a large bowl, mix together the shredded chicken, buffalo wing sauce and ranch dressing until combined.

Place ¼ cup of the chicken mixture on half of each tortilla.

Sprinkle each quesadilla evenly with ¼ cup of shredded cheddar cheese and 1 Tablespoon of crumbled blue cheese.

Fold over the tortilla and place the quesadillas (2 at a time) in a 5-6 quart basket air fryer. Spray the tops with a little nonstick olive oil spray.

Cook the quesadillas for about 4 minutes at 350°F. Flip the quesadillas over, spray with a little more nonstick olive oil spray and cook for an additional 4 minutes until crisp and cheese has melted. Continue with the rest of the quesadillas. Cut each quesadilla in half to make 16 triangles. Top with chopped cilantro. Serve immediately with ranch or blue cheese dressing on the side.

  • Please refer to my FAQ’s and ingredient list above for other substitutions or for the answers to the most common questions. 
  • The air fryer does not need to be preheated. However, you may have a style of air fryer that requires preheating so do that first if necessary.
  • I prefer olive oil nonstick spray as it is less likely to gunk up your air fryer basket over time like other nonstick sprays. 
  • This could take a slightly longer in your air fryer so please use your best judgment on how well done you like your quesadillas. 
  • You can freeze these premade or after you air fry them. 
  • Leftovers should be stored in a ziptop bag in the fridge and can be kept for a few days.
